Area Terraced mountain vineyards in Trentino, Valle di Cembra

Soil Calcareous

Grapes 100% Pinot Noir (starting from 2020 vintage), harvested exclusively by hand in the first half of September.

Exposure West (optimal for obtaining ripe grapes but with a marked acidity)

Growing system Guyot, yield about 60 hl/ha

Serving temperature 8-10° C

Vinification Manual harvesting in the first ten days of September. Selection of the flower must from a soft pressing of the grapes. Fermentation at low temperatures and brief stop in steel tanks. Second fermentation and maturation on the lees until remuage and subsequent disgorgement.

 

Visual exam Brilliant antique pink color; abundant and persistent foam; very fine and persistent perlage.

Olfactory exam Aromas of small berries, currants, raspberries, pomegranate and strawberries and delicate hints of almond.

Taste exam Fine and elegant on the palate. Strong, savory, mineral and fresh taste, from the mountains.

 

Pairings Excellent as an aperitif. It also goes perfectly with many appetizers, such as smoked trout tartare, first and second courses based on fish and white meat. Also excellent with medium-aged cheeses.
