Area Mountain vineyards in Trentino, Piana Rotaliana

Soil Alluvial, with great surface fertility and excellent underlying drainage.

Service temperature 18-20C

Vinification The grapes are harvested manually, selectively, and vinified in red. Fermentation takes place with maceration on the skins for 8-15 days, at a controlled temperature of 26/28°C. Subsequently the wine ages in steel and a small part in barrique. Further refinement in the bottle follows for a few months.

 

Visual exam Deep ruby red color with violet reflections.

Olfactory exam The nose is intense, with hints of wild berries, violets, and dark chocolate, with a light spicy note.

Taste exam The taste is dry, with the right tannins and sapidity. Soft and velvety, with very persistent taste sensations.

 

Pairings Structured and full wine. It goes well with cured meats, typical Trentino first courses (lasagne, pasta ragù, risotto), lamb, game/delicate game (deer, chamois), beef, cured meats, roasts, and aged cheeses.
