Area Terraced mountain vineyards in Trentino, Valle di Cembra

Soil Limestone Chardonnay grapes, harvested exclusively by hand in the first half of September.

Exposure West (optimal for obtaining ripe grapes but with a marked acidity)

Growing system Trentino pergola and guyot, yield around 60 hl/ha

Service temperature 8-10°C

Vinification After careful manual selection of the grapes, soft pressing of the whole grape, with only free-run must. Fermentation and aging in stainless steel tanks at controlled temperature. Second fermentation in the bottle according to the classic method and subsequent long aging on the lees for about 3 years in the underground cellar.

 

Visual exam Straw yellow colour; abundant and persistent foam; very fine and persistent perlage.

Olfactory exam Elegant and intense bouquet, fragrant and complex, with floral notes and ripe yellow fruit typical of Chardonnay, but also delicate and subtle notes of hazelnut and lightly toasted bread, due to the long aging on the lees.

Taste exam Strong, savory, mineral and fresh flavor. A sparkling wine which, due to its characteristics, immediately leads back to the Cembra valley, a very suitable terroir for Trento Doc.

 

Pairings Excellent as an aperitif. It also goes well with the whole meal. It is perfect with fish appetizers, vegetables, Alpine cold cuts and aged cheeses, first courses such as rice and pasta and fish and white meat main courses.
