Area Vineyards in the mountains in Trentino, Valle di Cembra.
Soil Loose marl, rich in limestone and substrate, originating from sedimentary rocks. Guyot training system. Vines of over thirty years. The combination of the high altitude (between 600 and 650 m asl) and the exposure to the west mean that ripening is slower, allowing for a perfect balance between the ripeness of the berries and the acidic composition. Yield: 40- 45 hl / ha
Serving temperature 16-18 ° C
Vinification Manual harvest of the grapes at the end of September, pre-fermentation cold maceration for a week and subsequent spontaneous alcoholic fermentation, followed by a further period of maceration and daily manual punching down. Malolactic fermentation in tonneaux, where it is then refined for about 18 months. Long bottle aging follows.
Visual test Ruby color with light shades tending to garnet.
Olfactory test On the nose hints of fruit in alcohol, blackberries, licorice, raspberry, currant, and cherry. Followed by toasted notes, a light balsamic and spicy hint (black pepper, clove).
Taste test In the mouth dry, with the right acidity and flavor, silky and velvety tannins with a pleasant return of the fruit; well-represented spices, light balsamic and chin notes in the finish. Fine and elegant.
Pairings Suitable with smoked cured meats appetizers (pancetta, speck) but also with game salami, and medium-aged hard cheeses. Also excellent with first courses with meat sauce, truffle risotto, and fish soups. Ideal with duck breast cooked at a low temperature, lamb in the oven, and venison fillet with currant sauce.
