cimbro rosso
cuvèe & selections
Denomination Dolomiti Igt
Grapes Lagrein - Teroldego
Area Mountain vineyard in Trentino, Piana Rotaliana
Soil Alluvial, with great superficial fertility and excellent drainage below.
Serving temperature 16-20 ° C
Vinification The grapes are harvested by hand, selectively and separately vinified in red. Fermentation takes place with maceration on the skins for 8-15 days, at a controlled temperature of 26/28 ° C. Subsequently, the wine matures exclusively in steel. This is followed by the blend of the two wines and a final refinement in the bottle for a few months.
Visual test Deep ruby red color with violet reflections.
Olfactory test The nose is fresh and very fruity, with light spicy notes.
Taste test The taste is fresh, rich, soft, mineral, and with great persistence.
Pairings Cimbro is an ideal cuvée for the whole meal, but also with cured meats, juicy first courses, or delicate soups, with red and white meats and, given its freshness, sometimes also interesting as an aperitif.
