Salísa Brut

Grapes: Chardonnay 100% (Blanc de Blancs) millesimato.

Vineyard location: Valle di Cembra – Trentino.

Soil type: the calcareous soil is situated at 500 meters above sea level where we can obtain ripe grapes still retaining a very good level of acidity.

Vinification: the grapes are handpicked and carefully selected. Afterward the whole bunches go through a soft press and only the first press is used. The wine is then fermented and aged in stainless steel tanks at a controlled temperature. In accordance with the Metodo Classico procedure the “prise de mousse” takes place, followed by a long aging on lees for 3 years in an underground cellar.

Characteristics: the color is pale straw with greenish reflections. Its mousse is abundant and lasting, with a very fine and persistent perlage. On the nose it is elegant and intense, fragrant and complex with floral and ripe yellow fruit notes, typical of Chardonnay: also subtle notes of hazelnut and lightly toasted bread come from the long aging on lees. Strong on the palate, sapid, mineral and fresh. A sparkling wine that for its characteristics leads quickly to the Cembra valley, whose soil is well suited for the Trento DOC.

To be served at: 10° C.

Food Pairing: excellent as an aperitif. It perfectly pairs fish or vegetable-based appetizers, pasta and risotto.
