Ice, water and fire, the elements of “ginius loci” in the Cembra valley, of Trentino, make this Terroir unique. From the emerged reefs of the Dolomites (Deodat de Dolomieu, 1750-1801, was the first to study the type of rocks predominant in the Dolomites, named in his honour “dolomia”) to the volcanoes of porphyry platform, to the ice which has modelled the hills overlooking the gully made by the Avisio River, here is the ancestral energy that characterizes the Cembra valley.
Even today from the flaps of the perennial Marmolada glacier, the queen summit of the Dolomites, from where the River Avisio rises and then creeps into the wild canyons and with undiminished energy embarks in the slow process of modeling.
The valley is invested by winds that run along its entire length. The warm Ora from the Garda Lake in the afternoon hours of the summer months, the cool evening breeze of Levegana and the north winds of the Fiemme valley which, for a thermal inversion, reach the Cembra valley at night , caressing the vineyards , creating the ideal environment for grape growing.
From the slopes of the calcareous deposits of the Monte Corona in Giovo, at an altitude over 800 meters above sea level up to the cliffs overlooking the restless Avisio , more than 700 km of dry stone walls that mark the vital terraces, are the tangible symbol of heroic mountain winemaking in Trentino and beyond.
