Salísa Dosaggio Zero

Grapes: Chardonnay 100% (Blanc de Blancs) vintage.

Vineyard location: Cembra Valley, Trentino, at the foot of Mount Corona in Giovo.

Soil type: the soil is calcareous. The vineyard is situated at 500 metres above sea level, facing west, where we can obtain well ripe grapes still retaining a very good level of acidity.

Vine training system: Trentino Pergola.

Vinification: the grapes are handpicked and carefully selected.
Afterward, the whole bunches go through a soft press and only the first press is used. 85-90% of the wine is then fermented in stainless steel tanks at a controlled temperature and the remaining in barriques. In accordance with the Metodo Classico procedure the “prise de mousse” takes place, followed by a long aging on lees for 40 months in an underground cellar.
No “liqueur d’expedition” is added during disgorgement.

Characteristics: the color is bright straw. Its mousse is abundant and lasting with a very fine and persistent perlage.
On the nose is elegant and intense, fragrant and complex with floral and ripe yellow fruit notes, typical of Chardonnay: also subtle notes of hazelnut and lightly toasted bread come from the long aging on lees. Strong on the palate, sapid, mineral and fresh.

To be served at: 10° C.

Food Pairing: Excellent as an aperitif for the most demanding palates.
It perfectly pairs fish or seafood based dishes, but goes also well with cured meat and mature cheese.
