Pinot Grigio Ramato
Grapes: Pinot Grigio 100%.
Vineyard location: Piana Rotaliana.
Soil type: alluvial landﬁll, highly fertile topsoil, excellent drainage.
Viniﬁcation: manual grape selection and harvesting, then de-stemming. Cold maceration for some hours and pressing. Fermentation at a controlled temperature partly in steel and partly in wooden vats, where the wine is aged for about one year. Then, further aging in the bottle.
Characteristics: coppery onion skin color. Warm, with sweet fruityﬂowery hints and light vanilla notes on the nose. Rich and full with a structured soft taste.
To be served at: 10-12° C.
Food Pairing: not only good as an aperitif. This wine enhances and brings a note of sweetness to strong ﬁrst courses or white meat dishes, shellﬁsh, mollusks and raw ﬁsh. Also good with young fresh cheeses.
