Vineyard location: Valle di Cembra.
Soil type: Partly loose of a porphyritic nature, partly calcareous.
Vine training system: simple Trentino Pergola and Guyot.
Viniﬁcation: manual grape selection and harvesting. Fermentation at a controlled temperature and aging for a couple of months in stainless steel vats.
Characteristics: pale straw color with greenish tints. On the nose it is ﬁne and intense with scents of aromatic herbs, elder, tropical fruit and citrus. Sapid and mineral with a pleasant acidity, typical characteristics of mountain wines. Dry and persistent.
To be served at: 10°-12° C.
Food Pairing: ideal as an aperitif also with ﬁsh sauce dishes, eggs, asparagus and mushrooms. Excellent with river ﬁsh such as trout and char.
