Grapes: Teroldego 100% (a Trentino autochthonous grape variety).
Vineyard location: Piana Rotaliana
Soil type: alluvial landﬁll from the River Noce, highly fertile top soil with excellent drainage.
Viniﬁcation: manual grape selection and harvesting; grapes are rack-dried for some months until reaching the ideal sugar concentration. Fermentation at ﬁrst in steel vats, where skins are left to macerate for about one month, and then in oak casks, where the wine is left to age. Then, further aging in the bottle for about one year.
Characteristics: deep ruby red color. Clear aromas of soft fruit with slight spicy hints and delicate notes of chocolate on the nose. Elegant and complex on the palate, with a nice balance between sweetness and tannins.
To be served at : 10°-12° C.
Food Pairing: this passito wine has a reasonably low level of residual sugar. It goes well with dry pastries, tarts with jams and chocolate. It also matches well with herby cheese. A meditation wine.
