Grapes: Teroldego and Lagrein

Vineyard location: Piana Rotaliana -Trentino.

Soil type: alluvial landfill from the River Noce, highly fertile top soil with excellent drainage

Vine training system: Guyot and Trentino Pergola.

Vinification: manual grape selection and harvesting followed by red vinification process of the grapes. Fermentation at a controlled temperature of 2628 degrees in steel vats for about 8-12 days, with maceration on the skins. Aged in steel vats. Then blending of the two wines occur and further aging in the bottle for some month.

To be served at: 18°-20° C.

Food Pairing: Cimbro is a blend which matches the whole meal. Ideal with cured meat, saucy pasta, delicate soups, red or white meat and due to its freshness is brilliant even without food.
